Tomato, parsnip,carrot and basil soup

2 onions

1 good sized parsnip

3 medium Carrots

Butter

Fresh thyme good pinch

Basil either fresh or dried two pinches

Nutmeg & aromat small amount of each to liking

Salt

Two ordinary tomatoes, handful of baby tomatoes and tin of chopped tomatoes

One large potato

Vegetable and chicken stock cubes

Two pints of water for stock cubes

This is nice recipe and getting the combination right so not to much of either carrot or tomato so as not overpowering.

Melt knob of butter add the chopped onion, carrot, parsnip till onion turns transparent.

Add the tomatoes chopped up and tin of tomatoes, along with herbs and seasoning

cook for other five minutes, add potato last chopped.

Now add the two pints of stock bring to boil and then simmer for 25 mins till ready.

Liquidise soup makes a hearty winter warmer and a nice change from lentil soup!

Dropping the Ego

Now is the moment… and dropping that overwhelming Ego.

What brings me to write this comes from two books

A NEW EARTH by Erkhart Tolle and

YOU ARE A BADASS how to stop doubting your greatness by Jen Sicaro

Both very much sum up our current situation in the world and that by finding our inner ‘being’ ie Stillness

This means dishing the hundred and one thoughts that the ego throws at us every day. Which only lead to hardship and unhappiness also outer happiness ie work, jobs, money are all cycles good and bad times loosing job or huge emotional upheaval after a bad relationship.

Can in many ways be a wake up call to finding true self but they are ever changing only through inner stillness being able to step back without emotion.

Being able to be amazed at the wonder of the body we currently inhabit through simple breathing exercises and finding ourselves living completely in the present without doubt or reliving past hardships or our past period.

That we can find harmony in ourselves in a way never found before and that our outer selves can then to be found with added depth. As to completely let go of the ego no matter how far down the journey you are is a liberating awakening of true wisdom and love.

As it allows growth concentration where once thoughts or that inner voice filled you with doubt and negativity. Positive vibes and as Tolle puts it enthusiasm and belief without ego centric power over taking this new knowledge.

Makes each and every person more awakened to how we can change this world for the better.

Jen Sicaro on the other hand brings in equal measure to love ourselves first and foremost that the universe is indeed plentiful. That it is our relationship and attitude towards life, relationships and money which keep many, many people forever recycling the same outcome and living our whole life on autopilot.

If we can combine actually loving ourselves to become butterflies and free spirits that we are all part of god, we are connected as one and to find our higher self to tune into what yoga/reiki itself opens us to.

The soul and how finely it touches our physical body and the environment around us, that it’s our emotions which rule the ego and to let go off this to connect to the soul. Concentrate on the here and now along with a healthy diet, being out in nature, spiritual pursuits and what feeds the soul not the ego.

We may indeed be able to make this a better world for us and the generations to come.

Grilled Chicken strips with parsley and sweet chilli

Grilled Chicken Strips with parsley, honey and sweet chilli sauce and lemon

Original comfort food serve with roast Potatoes and rice or your choice

I put potatoes on first sorry cheat with bought ones half hour to cook in oven then put on rice usually takes twenty minutes

Meanwhile put conventional grill on to 200

Put on oven proof dish strips of chicken salt and pepper

Add half juice of a lemon and some aromat

Then add good slug of honey, not quite as much sweet chilli sauce then good sprinkle of parsley

Massage all into chicken strips.

Wash hands put in grill increase heat to highest usually takes 15 mins turn half way and make sure chicken is thoroughly cooked.

Serve with roast potatoes, rice and have extra sweet chilli sauce for extra and enjoy

Ingredients

4-6 chicken strips per person

Good sprinkle of parsley

Good slug of honey

Almost equal of sweet chilli sauce

Salt, pepper and aromat

Juice of half a lemon

2 Challotes or one red onion sliced

Quarter of red/yellow/green piper sliced into small pieces

Three small carrots sliced

New potatoes sliced small

Small tomatoes three or four halved

Sea salt and pepper

Juice of one orange and lemon and some honey

Also Aramat and some dry herbs of choice mixed spice and little olive oil over potatoes and tomatoes

Add all ingredients leave potatoes and tomatoes for top put in conventional oven at 200 for 50 mins cook till golden and ready good with cauliflower and cheese sauce

Four rashes bacon cut into quarters

Use both smoked haddock and salmon cut into bite size pieces

Milk butter flour and cheese

Plain crisps

Cut up some bacon fry but not to crispy

Cut fish into bite size pieces cook gently for ten minutes poach

Use milk for cheese sauce

Cover fish and bacon in cheese sauce and cooked potatoes

Cook potatoes separate and combine all heat through in oven cover with grated cheese and plain crisps for extra bite put crisps on once out oven

Also make sure potatoes are in small quarters before covering everything in cheese sauce

Cook for 25 mins in oven till golden and everything thoroughly cooked

Penne Pasta Alternative recipe

Penne Pasta alternative recipe

 

3 tomatoes
Half tin chopped tomatoes
Olive oil
Half onion
Half carrot
150ml pineapple juice
Two Charlottes
One garlic clove
200ml white wine vinegar
50ml balsamic red wine vinegar
Pepper and salt flakes to season
Along with mixed herbs, Italian herb, dill, coriander, pinch mild chilli powder, garlic granules, thyme – raid spice cupboard but one pinch of each herb needed above is my main mix but season to own taste.

 

250g penne pasta cook for 12 mins till ready in salted water.

 

Easy to make sauté, onion, charlottes and carrot till see through for onion etc and cooked in olive oil add garlic clove crushed finely then add seasoning and herbs along with tomatoes (cut three whole tomatoes up also) cook for 20 mins add the balsamic red when almost ready,

Meanwhile cook Pena pasta till ready to taste and add to sauce which should have cooked for 25 mins by this time

Put in dish and garnish with grated cheese very good vegetable alternative without meat and very filling
